Red Hot Chili

Serving Size: 8
Ingredients:
1 lb. ground beef
1 lb. ground pork
2 tablespoons olive oil
4 garlic cloves, minced
1 large onion, chopped
1 green bell pepper, chopped
2 tablespoons ground cumin
1 28 oz. can crushed tomatoes
1 15 oz. can diced tomatoes
1/2 cup chili powder
1 teaspoon ground cayenne pepper
1 teaspoon ground chipotle pepper
1 15 oz. kidney beans
salt, to taste
1 tablespoon masa flour
Directions:
1. In a large pot pour in olive oil over medium high heat. Once oil is hot add in garlic, cook for 1 minute. Then add in onions and green pepper.
2. Once onions begin to turn clear add in ground bell and pork. Stir and add in cumin. Mix well.
3. Once meat is almost cooked pour in crushed and diced tomatoes. Then add chili powder, cayenne pepper and chipotle pepper. Mix well.
4. Finally add kidney beans and salt. Let simmer for 15-20 minutes.
5. If you want it thicker add in the masa flour and stir well.
- Adjust the amount of cayenne pepper – more if you like it hot, less if you prefer mild chili.
